Chicken Cheese Kebab

Serves - 4 People
Cooking Time - 15 Min

INGREDIENTS
2 Lbs          Chicken Breast Pieces

MARINATION
1/2 Cup      Cheese
1 Tsp          Kasoori Methi
1 Tbsp        Green Chilli Paste
1 Tbsp        Pepper Powder
1 Tsp          Garam Masala
1 Tsp          Coriander Powder
1 Tbsp        Thick (Hung)Yogurt
Salt As Required

PROCEDURE
  • Marinate the chicken pieces with the above ingredients and marinate for at least 2 hrs.
  • Put on the skewer and set the temperature to 350 deg. 
  • Cook for 10 min on each side till it turns slightly brown.
  • Serve hot with Mint Chutney !!!

Hummus !!!

Hummus is a popular Middle Eastern Dish made from mashed chickpeas, a touch of garlic and tahini (sesame seeds paste). It's as healthy as it is delicious.


Preparation Time : 15 Min

INGREDIENTS
1 Cup              Chickpeas / Kabuli Channa Boiled            
3                      Garlic 
1/2 Tbsp        Sesame Seeds
2                      Chilies
3 Tbsp            Lemon Juice
4 Tbsp            Olive Oil
1 Tbsp            Cilantro Chopped
Pinch of          Red Chili Powder
Salt to taste

PREPARATION
  • Soak Chickpeas for at least 3 hrs.Put them in a pressure cooker with enough water and pressure cook till cooked. Cool, drain and set aside.
  • Heat a non-stick pan and dry roast the sesame seeds until fragrant but not brown.Remove from heat and cool.
  • Put toasted sesame seeds and 1/2 tbsp olive oil in the grinder and grind to paste.
  • Add the channa, salt, 1 tbsp lemon juice and garlic. Grind to a paste.

  • With the grinder running, add 2 tbsp olive oil little at a time.
  • Transfer it onto a plate and season with lemon juice and red chili powder and finally drizzle some olive oil.
SERVE WITH PITA BREAD

Chicken Haleem

Haleem is a slow cooked dish consisting of  meat,lentils and broken wheat.It's an Arabic dish that has been introduced to us during the Nizam Rule.

INGREDIENTS
2 Full             Chicken Breasts
1 Cup            Fried Onions
8                     Green Chillies
1 Tbsp          Ginger Garlic Paste
2 Tbsp          Curd
1 Cup            Coriander Leaves
1 Cup            Mint
1/2 Cup        Ghee
Salt to taste
For the Powder
1 Tsp           Chana Dal
1 Tsp           Masoor Dal
1 Tsp           Toor Dal
1 Tsp           Urad Dal
1 Tsp           Moong Dal
1 Tsp           Sesame Seeds
1 Tsp           Cumin Seeds
1 Tsp           Shahi Jeera
1 Tsp           Pepper Corns
5                   Cardamom
5                   Cloves
5                   Almonds
1 Stick         Cinnamon
1/4 Cup       Oats
1/2 Cup       Broken Wheat

PROCEDURE
  • Grind all the above ingredients listed in a blender and make a powder.
  • Take a pressure cooker and heat ghee & ginger garlic paste and saute it.
  • To this add chicken pieces,fried onions,curd,green chillies,chopped coriander,mint,salt and the powder and add water(3 - 4 cups).
  • Mix it well and let it cook for 3 whistles on high flame and low flame for 30-40 min and switch it off.
  • Now take a masher and mash it on low flame.
  • Add few spoons of ghee to it and mix it well.
  • Garnish with lime juice,fried onions,cilantro and cashew nuts.
                                                    Serve Hot with a Glass of coke!!!
